Aspergillus oryzae, a filamentous fungi also known as koji, is widely used for the production of sake, miso, and soy sauce. There are two theories as to the origin of A. oryzae. One suggests that A. oryzae is a domesticated species not found in nature. The other, more historical theory, is that it is found in the mold growing on ears of rice. There is evidence supporting A. oryzae's potential to breaking down biodegradable plastic. Although there have been few case reports of hypersensitivity pneumonitis secondary to Apergillus oryzae, it has been considered that physicians recognize the potential due to increasing globalization of food production.
