Lecithin belongs to a group of yellow-brownish fatty substances occurring in animal and plant tissues, and in egg yolk. It is composed of phosphoric acid, choline, fatty acids, glycerol, glycolipids, triglycerides, and phospholipids (e.g., phosphatidylcholine, phosphatidylethanolamine, and phosphatidylinositol). Lecithin is sometimes used as a synonym for pure phosphatidylcholine, a phospholipid that is the major component of its phosphatide fraction. Lecithin may be isolated either from egg yolk or from soy beans.

Lecithin naturally occurs in plants and animals. It is composed of glycerol, two fatty acids, a phosphate group, and choline.Lecithin is found in many foods including egg yolks, liver, peanuts, corn, spinach, whole grains, and soy beans.Lecithin is used commercially as an emulsifier in baking mixes, candy, chewing gum, chocolate, ice cream, macaroni, margarine, whipped toppings, and many more.Lecithin in the body is present in bile and functions to help emulsify dietary fats in the lumen of the small intestine. Bile is produced in the liver and stored and concentrated in the gallbladder.
Lecithin is a the most abundant phospholipid that makes up the majority of cellular membranes. LP32157-7 Sphingomyelin
Sphingomyelin is a type of sphingolipid found in animal cell membranes, especially in the membranous myelin sheath which surrounds some nerve cell axons. Like all sphingolipids, it consists of sphingosine bonded to one fatty acid and one polar head group, which, in sphingomyelins, is either phosphocholine or phosphoethanolamine. The fatty acid is attached to the second carbon of sphingosine via an amide linkage. The function of sphingomyelin remained unclear until recently when it was found to have a function in signal transduction.

Phosphatidylglycerol is a glycerophospholipid found in pulmonary surfactant.
The general structure of phosphatidylglycerol consists of a L-glycerol 3-phosphate backbone ester-bonded to either saturated or unsaturated fatty acids on carbons 1 and 2. The head group substituent glycerol is bonded through a phosphomonoester. It is the precursor of surfactant and its presence in the amniotic fluid of the newborn indicates fetal lung maturity.
Approximately 98% of alveolar wall surface area is due to the presence of type I cells, with type II cells producing pulmonary surfactant covering around 2% of the alveolar walls. Once surfactant is secreted by the type II cells, it must be spread over the remaining type I cellular surface area. Phosphatidylglycerol is thought to be important in spreading of surfactant over the Type I cellular surface area. The major surfactant deficiency in premature infants is associated with the lack of phosphatidylglycerol, even though it comprises less than 5% of pulmonary surfactant phospholipids.

The ability of an infant to survive outside the uterus is dependent on proper pulmonary function. Pulmonary surfactant is needed to reduce the surface tension of the air-liquid interface of the alveolar lining, so that alveoli do not collapse upon expiration. Infants born with a deficiency of pulmonary surfactant are at increased risk of developing respiratory distress syndrome (RDS). The incidence of RDS is dependent on the gestational age, with more RDS occurring in younger fetuses.
