Arachidonate (AA) is an essential polyunsaturated omega-6 fatty acid that is produced from dietary linoleic acid. AA is located in human fat, liver, brain, and glandular organs and is a mediator of inflammation. The AA within the phospholipids of cell membranes is the surface where the production of a number of biologically active compounds occurs. A few of the compounds produced includes prostaglandins, thromboxanes, and leukotrienes which regulate processes including platelet aggregation, blood clotting, smooth muscle contraction, leukocyte chemotaxis, inflammatory cytokine production, and immune function.[PubChem: 444899] AA is released from the cell membrane when acted upon by phospholipases and then metabolized by cyclooxygenase (COX) producing the prostanoids prostaglandin and thromboxane A2, which can stimulate or mitigate inflammation. PMID: 21508345 One of the benefits of the Omega-3 fatty acids for patients with inflammatory disease is believed to be their selective modification of the metabolism of AA by the omega-3 fatty acids that results in a reduced amount of inflammation. Docosahexaenoate (DHA) is one of the essential polyunsaturated omega-3 fatty acids that is primarily obtained by ingesting fatty fish including salmon, mackerel, tuna, herring, and sardines.[https://ods.od.nih.gov/factsheets/Omega3FattyAcids-HealthProfessional/] There are many benefits derived from eating healthy levels of DHA including a reduction of chronic inflammation, atherosclerosis, hypertension, arthritis, depression, adult-onset diabetes mellitus, myocardial infarction, thrombosis, and some cancers. DHA is important in brain development of infants and in maintaining normal brain function in adults. Studies have demonstrated that infants who drink DHA-fortified formula have higher visual acuity than infants who drink unfortified formula. Deficiencies of DHA have been associated with fetal alcohol syndrome, attention deficit hyperactivity disorder, cystic fibrosis, phenylketonuria, unipolar depression, aggressive hostility, adrenoleukodystrophy, cognitive decline in aging individuals, and the onset of sporadic Alzheimer's disease. Patients who consume 200 mg/day of DHA have a 50% reduction in the incidence of sudden cardiac arrest. PMID: 10479465

Fatty acids are carboxylic acids with a long aliphatic tail, and naturally occurring fatty acids usually have an even number of carbon atoms. Short chain fatty acids have less than six carbons, medium chain have six to twelve, long chain have 14 to 20, and very long chain fatty acids have 22 or more carbon atoms. Fatty acids are important sources of fuel during fasting or times of high metabolic demand, especially for heart and skeletal muscle, and are oxidized by mitochondria to produce ATP. Patients with a fatty acid oxidation disorder are unable to use fatty acids for energy and can present with hypoketotic hypoglycemia, liver disease and failure, skeletal myopathy, cardiomyopathy or sudden death in early life, and severe episodes of metabolic decompensation can occur during periods of fasting or illness.

Eicosapentaenoate (EPA) is a long chain omega-3 fatty acid that is present throughout the body including in cell membranes. EPA is found in fatty fish including salmon, tuna, mackerel, sardines, shellfish, and herring. EPA can be biosynthesized from alpha-linolenic acid (ALA), but it is much more efficient to increase levels by including EPA-rich sources in one's diet. EPA has anti-inflammatory properties that are vital to fetal development and the process of healthy aging. Its anti-inflammatory effects are due to reduced gene expression of genes involved in inflammatory and atherogenesis-related pathways, thereby lowering the risk of cardiovascular disease. EPA has also been found to increase platelet stability, decrease endothelial activation, and improve vascular permeability. Taking EPA supplements leads to an increased amount of EPA in the plaque of carotid arteries which may decrease inflammation and increase plaque stability. Erucic acid is a monounsaturated omega-9 fatty acid found mainly in the Brassica family of plants such as canola, rapeseed, wallflower seed, mustard seed as well as Brussels spouts and broccoli. Some Brassica cultivars can have up to 40 to 50 percent of their oil recovered as erucic acid. Erucic acid is also known as cis-13-docosenoic acid. The trans isomer is known as brassidic acid. Erucic acid occurs in nature only along with bitter-tasting compounds. Erucic acid has many of the same uses as mineral oils but with the advantage that it is more readily bio-degradable. Its high tolerance to temperature makes it suitable for transmission oil. Its ability to polymerize and dry means it can be - and is - used as a binder for oil paints. Increased levels of eicosenoic acid (20:ln9) and erucic acid (22:1n9) have been found in the red blood cell membranes of autistic subjects with developmental regression PMID: 16581239. Erucic acid is broken down long-chain acyl-coenzyme A (CoA) dehydrogenase, which is produced in the liver. This enzyme breaks this long chain fatty acid into shorter-chain fatty acids. Human infants have relatively low amounts of this enzyme and because of this, babies should not be given foods high in erucic acid.

In chemistry, especially biochemistry, a fatty acid is a carboxylic acid often with a long unbranched aliphatic tail (chain), which is either saturated or unsaturated. Carboxylic acids as short as butyric acid (4 carbon atoms) are considered to be fatty acids, while fatty acids derived from natural fats and oils may be assumed to have at least 8 carbon atoms, e.g. caprylic acid (octanoic acid). Most of the natural fatty acids have an even number of carbon atoms, because their biosynthesis involves acetyl-CoA, a coenzyme carrying a two-carbon-atom group. Industrially, fatty acids are produced by the hydrolysis of the ester linkages in a fat or biological oil (both of which are triglycerides), with the removal of glycerol.

Fatty acids are carboxylic acids with a long aliphatic tail, and naturally occurring fatty acids usually have an even number of carbon atoms. Short chain fatty acids have less than six carbons, medium chain have six to twelve, long chain have 14 to 20, and very long chain fatty acids have 22 or more carbon atoms. Fatty acids are important sources of fuel during fasting or times of high metabolic demand, especially for heart and skeletal muscle, and are oxidized by mitochondria to produce ATP. Patients with a fatty acid oxidation disorder are unable to use fatty acids for energy and can present with hypoketotic hypoglycemia, liver disease and failure, skeletal myopathy, cardiomyopathy or sudden death in early life, and severe episodes of metabolic decompensation can occur during periods of fasting or illness.

Myristic acid, also called tetradecanoic acid or 14:0 is a common saturated fatty acid with the molecular formula CH3(CH2)12COOH. A myristate is a salt or ester of myristic acid.
Myristic acid is named after the nutmeg Myristica fragrans. Nutmeg butter is 75% trimyristin, the triglyceride of myristic acid. Besides nutmeg, myristic acid is also found in palm kernel oil, coconut oil, butter fat and is a minor component of many other animal fats. It is also found in spermacetin, the crystallized fraction of oil from the sperm whale.
Myristic acid is also commonly added co-translationally to the penultimate, nitrogen-terminus, glycine in receptor-associated kinases to confer the membrane localisation of the enzyme. The myristic acid has a sufficiently high hydrophobicity to become incorporated into the fatty acyl core of the phospholipid bilayer of the plasma membrane of the eukaryotic cell. In this way, myristic acid acts as a lipid anchor in biomembranes.
The ester isopropyl myristate is used in cosmetic and topical medicinal preparations where good absorption through the skin is desired.
Reduction of myristic acid yields myristyl aldehyde and myristyl alcohol.

Oleic acid is a mono-unsaturated omega-9 fatty acid found in various animal and vegetable sources. It has the formula CH3(CH2)7CH=CH(CH2)7COOH.[2] The trans-isomer of oleic acid is called elaidic acid.
Oleic acid may hinder the progression of ALD, or adrenoleukodystrophy, a fatal disease that affects the brain and adrenal glands.
Oleic acid may help boost memory.
Oleic and monounsaturated fatty acid levels in the membranes of red blood cells have been associated with increased risk of breast cancer. Oleic acid may be responsible for the hypotensive (blood pressure reducing) effects of olive oil.

Palmitic acid,CH3(CH2)14COOH or hexadecanoic acid in IUPAC nomenclature, is one of the most common saturated fatty acids found in animals and plants. As its name indicates, it is a major component of the oil from palm trees (palm oil and palm kernel oil). The word palmitic is from the French "palmitique", the pith of the palm tree. Palmitic acid was discovered by Edmond Frémy in 1840, in saponified palm oil. Butter, cheese, milk and meat also contain this fatty acid. Palmitate is a term for the salts or esters of palmitic acid. The palmitate anion is the observed form of palmitic acid at physiological pH.

Palmitoleic acid, or (Z)-9-hexadecenoic acid, is an omega-7 monounsaturated fatty acid with the formula CH3(CH2)5CH=CH(CH2)7COOH that is a common constituent of the glycerides of human adipose tissue. It is present in all tissues, but generally found in higher concentrations in the liver. It is biosynthesized from palmitic acid by the action of the enzyme delta-9 desaturase.

A fatty acid of exogenous (primarily ruminant) origin. Many "odd" length long chain amino acids are derived from the consumption of dairy fats (milk and meat). Pentadecanoic acid constitutes 1.05% of milk fat and 0.43% of ruminant meat fat. The content of heptadecanoic acid in the subcutaneous adipose tissue of humans appears to be a good biological marker of long-term milk fat intake in free-living individuals in populations with high consumption of dairy products.
