A triglyceride (TG, triacylglycerol, TAG, or triacylglyceride) is an ester derived from glycerol and three fatty acids. There are many triglycerides, depending on the oil source, some are highly unsaturated, some less so. Triglycerides are the main constituents of vegetable oil (typically more unsaturated) and animal fats (typically more saturated). In humans, triglycerides are a mechanism for storing unused calories, and their high concentrations in blood correlates with the consumption of starchy and fatty foods. High levels of triglycerides in the bloodstream have been linked to atherosclerosis and, by extension, the risk of heart disease and stroke. Diets high in carbohydrates, with carbohydrates accounting for more than 60% of the total energy intake, can increase triglyceride levels.

In chemistry, especially biochemistry, a fatty acid is a carboxylic acid often with a long unbranched aliphatic tail (chain), which is either saturated or unsaturated. Carboxylic acids as short as butyric acid (4 carbon atoms) are considered to be fatty acids, while fatty acids derived from natural fats and oils may be assumed to have at least 8 carbon atoms, e.g. caprylic acid (octanoic acid). Most of the natural fatty acids have an even number of carbon atoms, because their biosynthesis involves acetyl-CoA, a coenzyme carrying a two-carbon-atom group. Industrially, fatty acids are produced by the hydrolysis of the ester linkages in a fat or biological oil (both of which are triglycerides), with the removal of glycerol.

Fatty acids are carboxylic acids with a long aliphatic tail, and naturally occurring fatty acids usually have an even number of carbon atoms. Short chain fatty acids have less than six carbons, medium chain have six to twelve, long chain have 14 to 20, and very long chain fatty acids have 22 or more carbon atoms. Fatty acids are important sources of fuel during fasting or times of high metabolic demand, especially for heart and skeletal muscle, and are oxidized by mitochondria to produce ATP. Patients with a fatty acid oxidation disorder are unable to use fatty acids for energy and can present with hypoketotic hypoglycemia, liver disease and failure, skeletal myopathy, cardiomyopathy or sudden death in early life, and severe episodes of metabolic decompensation can occur during periods of fasting or illness.
