LP73201-3 Protein intake
Animal and plant proteins are made up of about 20 common amino acids. Amino acids are required for the synthesis of body protein and other important nitrogen-containing compounds, such as creatine, peptide hormones, and some neurotransmitters. Although allowances are expressed as protein, the biological requirement is for amino acids. The proteins of the body are continually being broken down and re-synthesized in a process called protein turnover. Protein is the main source of nitrogen and accounts for about 16% of the protein weight. Protein deficiency rarely occurs as an isolated condition, and usually results from insufficient food intake. The symptoms are most commonly seen in malnourished children in poor countries. Proteins are found in both animal and plant foods.

Part Descriptions
LP203053-6 High biological value protein intake
The biological value of a protein refers to how well and how quickly the body can actually use the protein. Generally, animal proteins have high biological value, that is, they contain complete essential amino acids necessary for life. Plant proteins can also be high biological value depending on the food and the clinical situation. For example, patients with kidney disease have to monitor their phosphorous intake, so a protein such as whey that contains a low level of phosphorus would be considered of high biological value. For vegetarians, non-meat animal proteins (milk, yogurt, eggs) and high- value plant proteins should be combined with complementary foods (rice and beans for example) to provide all of the essential amino acids. For patients with inborn errors of metabolism, high biological value proteins are foods that do not contain, or contain very little of, the amino acid that they cannot metabolize.

LP203054-4 Casein intake
Casein (from Latin caseus, "cheese") is the name for a family of related phosphoproteins (αS1, αS2, β, κ). These proteins are commonly found in mammalian milk, making up 80% of the proteins in cow milk and between 20% and 45% of the proteins in human milk. Casein has a wide variety of uses, from being a major component of cheese, to use as a food additive, to a binder for safety matches. As a food source, casein supplies amino acids, carbohydrates, and the two inorganic elements calcium and phosphorus. A small fraction of the population is allergic to casein.

LP203055-1 Whey intake
Whey protein is the protein contained in whey, the watery portion of milk that separates from the curds when making cheese. Whey protein is used for improving athletic performance, as a food supplement, as an alternative to milk for people with lactose intolerance, for replacing or supplementing milk-based infant formulas, and for reversing weight loss and increasing glutathione (GSH) in people with HIV disease. Whey protein is also used for protein allergy, asthma, high cholesterol, obesity and weight loss, preventing allergies in infants, late-stage cancer, and colon cancer.

LP203056-9 Gluten intake
Gluten is a general name for the proteins gliadin and glutenin that are found in wheat (durum, emmer, spelt, farina, farro, Kamut, khorasan, wheat and einhorn), rye, barley, and triticale. Gluten gives elasticity to dough, helping it rise and to keep its shape, and often gives the final product a chewy texture. Some people are gluten-intolerant, meaning their bodies produce an abnormal immune response breaking down gluten during digestion. Gluten-related disorders is an umbrella term for diseases triggered by gluten, which include coeliac disease, non-celiac gluten sensitivity, wheat allergy, gluten ataxia and dermatitis herpetiformis.
