Term Description

Milk specimens can be tested for infectious organisms as part of regulatory testing, quality control, or during an infectious disease outbreak. Typically, microorganisms that survive pasteurization are gram-positive, and gram-negative bacteria do not survive the process of pasteurization; however, if any gram-negative organisms do survive, they tend to spoil milk more quickly than gram-positive organisms.
