Wheat (Triticum spp.) is a grass cultivated world-wide. It is the most important human food grain and ranks second in total production as a cereal crop behind maize ; the third being rice. Wheat is one of the major cereal grains belonging to the grass family (Poaceae or Gramineae) and is a staple food item in most diets worldwide.

Wheat is among the 6 most important food items accounting for hypersensitivity reactions in children.

Special adverse reactions to Wheat protein include:
- Baker's asthma (an IgE-mediated reaction to inhaled flour from Wheat and other grains)
- Coeliac disease, a non-IgE-mediated enteropathy caused by Wheat gliadin, and
- Wheat-dependant exercise-induced asthma or anaphylaxis.

The onset of adverse reactions may be immediate, delayed, or both immediate and delayed. Differences in the specific allergens, the routes of sensitisation, and the end-organ responsiveness have not been completely understood or elucidated.
