Description

Neutral fat, or acylglycerol, is the general name for an ester of glycerol with one, two, or three fatty acids. Specific neutral fats include monoacylglycerol (MAG), diacylglycerol (DAG), and triacylglycerol (TAG, also called triglyceride). [http://www.sbcs.qmul.ac.uk/iupac/lipid/lip1n2.html#p11] The majority of dietary acylglycerols are in the form of TAG, which comprise more than 90% of common edible oils such as olive, soybean, palm, and corn oils. Cottonseed oil contains the most DAG (9-10%), while the other edible oils contain approximately 1-5%.
