Corylus avellana (Cor a) 14 is a seed storage protein of hazelnut that measures 13-14 kDa and is a 2S albumin. 2S albumins have a very stable intrinsic structure that is preserved even in harsh environments, such as the gastrointestinal tract where it is believed to initiate an immune response. PMID: 18949071 The Cor a 14 protein affects 70% of children and 39% of adults sensitive to hazelnut proteins and is associated with severe allergic reactions in both demographic groups.(http://www.phadia.com/en/products/allergy-testing-products/immunocap-allergen-information/food-of-plant-origin/allergen-components/rcor-a-14-hazelnut/) Cor a 14 sensitivity is predicitive of a severe allergic reaction when exposure to Cor a 14 occurs.
