Description
Anacardium occidentale (Ana o) 3 is a 2S albumin and a major allergen of cashew nuts that elicits an allergic response in 81% of people with a sensitivity to cashews. 2S albumins have a very stable intrinsic structure that is preserved even in harsh environments, such as the gastrointestinal tract where it is believed to initiate an immune response. Due to its resistance to both hydrolysis in the intestinal tract and denaturation by heat, Ana o 3 is considered a very potent allergen.(http://www.phadia.com/es/5/Productos/ImmunoCAP-Allergens/Food-of-Plant-Origin/Allergen-Components/rAna-o-3-Cashew-nut/) Three native large subunit isoforms of recombinant Ana o 3 have been identified to have 16 reactive peptides, four of which produce strong signals.
