Description

Oncorhynchus keta is a Pacific salmon known as chum or dog salmon whose geographical range includes Washington State, Alaska, Russia and Japan. ( http://www.seafoodchoices.com/archived%20smartchoices/species_salmonchum.php) Vitellogenin is one of the major allergens of fish roe.( http://agris.fao.org/agris-search/search.do?recordID=JP2007000927) Vitellogenin that has accumulated in fish roe degrades to the three major egg yolk proteins lipovitellin, phosvitin and β′-c. While lipovitellin and phosvitin are nutrients used by the oocyte, β′-c is not proteolytically broken down and provides nutrition for both the oocyte and dividing embryo.
