Nitric oxide is converted to nitrate (NO3-) and nitrite (NO2-), both inorganic ions that occur naturally in the soil, water and some foods. Nitrates are relatively non-toxic but can become toxic when converted to nitrites either in food or in the digestive tract. In animals, pigs are more susceptible to nitrite poisoning than cattle and sheep. PMCID: PMC4170561 Pigs have been poisoned by drinking the condensed water from ventilating shafts in piggeries and after eating plaster board which had fallen into their pens after becoming soaked with this material.
