Acetaldehyde, sometimes known as ethanal, is an organic chemical compound with the formula C H 3 CHO or MeCHO. It is is a flammable liquid with a fruity smell. Acetaldehyde occurs naturally in ripe fruit, coffee, and fresh bread and is produced by plants as part of their normal metabolism. It is probably best known as the chemical that causes hangovers. In the chemical industry, acetaldehyde is used as an intermediate in the production of acetic acid, certain esters, and a number of other chemicals. In 1989, US production stood at 740 million pounds (336,000 t).

A colorless, flammable liquid used in the manufacture of acetic acid, perfumes, and flavors. It is also an intermediate in the metabolism of alcohol. It has a general narcotic action and also causes irritation of mucous membranes. Large doses may cause death from respiratory paralysis.

Acetaldehyde is a paraldehyde metabolite. Paraldehyde is a Schedule IV depressant used most frequently in a hospital setting to treat delirium tremers associated with alcohol withdrawl. Paraldehyde is sometimes used to treat certain convulsive disorders, including status epilepticus. Paraldehyde causes the patient's breath to have a strong, characteristic unpleasant odor, which lasts about one day after stopping use of the medicine.
