Oxalate is an organic dicarboxylate that can be found in oxalic acid, soluble salt, or insoluble salt forms. Oxalate may be consumed in certain foods, or produced within the body by the kidney, liver, epithelial, or apocrine cells. Humans cannot fully metabolize oxalate, rather bacteria within the gut must break it down. Oxalate can combine with calcium to form calcium oxalate (CaOx), which accumulates to form microcalcified crystals and kidney stones. Further studies have shown that the microcalcified crystals can lead to breast cancer or other cancerous tumors if left untreated. PMID: 26493452 ]
