Carrot is a biennial, indigenous to Europe. This member of the Parsley family has lacy green foliage and long, slender, fleshy, orange storage roots, which are eaten raw or cooked. Wild Carrots have small, woody taproots, but cultivated varieties have been improved by selection and breeding.
Carrot commonly induces symptoms of food allergy, oral allergy syndrome, and asthma in sensitised individuals. Allergy to Carrot is often associated with allergy to Birch pollen. Carrot allergy may occur in the elderly.

The leukocyte histamine release test (LHR, LHRT) measures the amount of histamine released in-vitro in the presence of an allergen. Allergen extracts in varying concentrations are added to isolated leukocytes from peripheral blood. If the patient is hypersensitive to the specific antigen, the leukocytes will release the histamine in-vitro. The amount of histamine released will depend on the sensibility to the allergen.
