Rye (Secale cereale) is a grass grown extensively as a grain and forage crop. It is a member of the wheat tribe (Triticeae) and is closely related to barley and wheat. Rye grain is used for flour, rye bread, rye beer, some whiskies, some vodkas, and animal fodder. It can also be eaten whole, either as boiled rye berries, or by being rolled, similar to rolled oats. Rye should not be confused with Ryegrass which is used for lawns, pasture, and hay for livestock.

A hardy grain crop, rye, grown in northern climates. It is the most frequent host to ergot (CLAVICEPS), the toxic fungus. Its hybrid with TRITICUM is TRITICALE, another grain.

There is a need to differentiate between Rye the foodstuff (Secale cereale), Cultivated Rye grass pollen (Secale cereale) g12, Rye grass pollen (Lolium perenne) g5, and Wild Rye grass pollen (Elymus tricoides) g70. This distantly related genus, Elymus, contains species known as Wild Ryes, which are used as cover and for forage. A Wheat hybrid is known as Giant Rye.
Rye and Rye flour may commonly induce symptoms of food allergy in sensitised individuals, in particular in bakers. Symptoms may include asthma, rhinitis, sneezing and wheezing. Food allergy with gastrointestinal symptoms, including nausea, vomiting, gastric irritation, abdominal pain and diarrhoea, has been reported. Cutaneous symptoms may include pruritis, urticaria, dermatitis, atopic dermatitis and angioedema. Anaphylaxis or vascular collapse with exercise has been documented.

The leukocyte histamine release test (LHR, LHRT) measures the amount of histamine released in-vitro in the presence of an allergen. Allergen extracts in varying concentrations are added to isolated leukocytes from peripheral blood. If the patient is hypersensitive to the specific antigen, the leukocytes will release the histamine in-vitro. The amount of histamine released will depend on the sensibility to the allergen.
