Shrimp is considered to be a highly allergenic food and can cause severe reactions. Numerous shrimp species exist, including Pandalus borealis(deep-water shrimp, cold-water shrimp, northern shrimp, Alaskan pink shrimp, northern red shrimp), Penaeus monodon(giant tiger prawn, black tiger prawn, leader prawn, grass prawn), Metapenaeus joyneri(shiba shrimp), and Metapenaeopsis barbata(whiskered velvet shrimp, red rice shrimp, fired prawn). Tropomyosin, a highly conserved muscle protein, is one of the major allergens in shrimp. Anaphylactic reactions, urticaria, gastrointestinal and respiratory symptoms have been reported in allergic patients. Patients allergic to shrimp typically have allergic reactivity to multiple crustacean species.

The leukocyte histamine release test (LHR, LHRT) measures the amount of histamine released in-vitro in the presence of an allergen. Allergen extracts in varying concentrations are added to isolated leukocytes from peripheral blood. If the patient is hypersensitive to the specific antigen, the leukocytes will release the histamine in-vitro. The amount of histamine released will depend on the sensibility to the allergen.
