Description

Tropomyosin belongs to a class of highly conserved proteins in invertebrates and vertebrates, the muscle protein of invertebrates, e.g., lobster, fly. The invertebrate tropomyosins are allergenic in man with high IgE cross-reactivity and have been therefore referred to as pan-allergens. Tropomyosins are also present in vertebrate sources of food, e.g., bony fish, beef, pork and chicken, but are rarely allergenic in these foods compared to lobster and shrimp.
