Heat-stable enterotoxins are proteins secreted by some bacteria including Escherichia coli, Yersinia enterocolitica, Vibrio cholera and others that cause secretory diarrhea. These enterotoxins are composed of 17-53 amino acids that share a conserved C-terminal region. They also have three disulfide bonds that give them heat stability and biological activity. After a series of reactions, the enterotoxins lead to the phosphorylation of the cystic fibrosis transmembrane conductance regulator (CFTR), which cause the production of Cl-, HCO3-, and water secretion, resulting in diarrhea.
