Corylus avellana (Cor a) 14 is a seed storage protein of hazelnut that measures 13-14 kDa and is a 2S albumin. 2S albumins have a very stable intrinsic structure that is preserved even in harsh environments, such as the gastrointestinal tract where it is believed to initiate an immune response.
