Anacardium occidentale (Ana o) 3 is a 2S albumin and a major allergen of cashew nuts that elicits an allergic response in 81% of people with a sensitivity to cashews. 2S albumins have a very stable intrinsic structure that is preserved even in harsh environments, such as the gastrointestinal tract where it is believed to initiate an immune response.
