Campylobacter (meaning 'twisted bacteria') is a genus of bacteria that are Gram-negative, spiral, and microaerophilic. Motile, with either uni- or bi-polar flagella, the organisms have a characteristic spiral/corkscrew appearance and are oxidase-positive. Campylobacter jejuni is now recognized as one of the main causes of bacterial foodborne disease in many developed countries. At least a dozen species of Campylobacter have been implicated in human disease, with C. jejuni and C. coli the most common. C. fetus causes spontaneous abortions in cattle and sheep, and is an opportunistic pathogen in humans.

Other sources of Campylobacter include water, animals, and unpasteurized milk. Symptoms begin 2-5 days after being exposed and include bloody diarrhea, fever, abdominal cramps, nausea, and vomiting. Some people are asymptomatic. Campylobacter can spread to the bloodstream and cause life-threatening illness in immunocompromised patients. Clostridium difficile toxin's A and B are encoded by the tcdA and tcdB genes, respectively. PMID: 20664812 They share similar molecular characteristics with comparable sizes (308 kD for tcdA and 269 for tcdB) and 63% homology in their amino acid sequences. PMID: 9312171 TcdA and tcdB are expressed in response to environmental stresses, such as antibiotics.[ PMID 15831824] Nucleic acid sequences within these genes are targeted to confirm the presence of C. difficile toxins and diagnose the cause of diarrhea, abdominal pain, fever, nausea and other toxin-producing symptoms.

Plesiomonas shigelloides is a Gram-negative, rod-shaped bacterium which has been isolated from freshwater, freshwater fish, shellfish, and from many types of animals. Human exposure to P. shigelloides is likely through contaminated water which has been used for drinking, recreation, or to rinse foods that are eaten without cooking. Not all cases of ingested P. shigelloides result in illness, and the dose needed for clinical symptoms is presumed to be at least a million organisms. Symptomatic disease is usually self-limiting, and is characterized by fever, chills, abdominal pain, nausea, watery diarrhea, and vomiting. Symptoms typically begin 20-24 hours after consumption of contaminated food or water and can last from one day to one week. Salmonella are gram-negative, flagellated, facultative intracellular, anaerobic bacilli with O, H and Vi surface antigens. Once ingested, Salmonella survives the gastric acid barrier and penetrates the epithelial cells of the small and large intestines. The invasion of the epithelial cells stimulates the release of cytokines and a subsequent inflammatory response leading to diarrhea and possible ulceration of the mucosa.[NCBI Books: 8435] Antibodies to Salmonella are the body's defense when the bacteria is outside of its host cell which occurs at the initial infection and when the bacillus moves from cell to cell. There is a 10 minute window of opportunity when the Salmonella bacillus leaves the macrophage to invade another. During that time, antibodies and complement work to eradicate the bacilli, but some of the extracellular bacilli will evade attack and enter another host cell. Studies have shown that vaccines play an important role in the fight against typhoid fever. PMID: 25566248 There are two species of Salmonella: S. enterica and S. bongori. These species can be further subclassified into subspecies and serovars.
Veterinary Medicine:
Salmonella infection is most often caused by the serovars Salmonella choleraesuis, and Salmonella typhimurium and less often by Salmonella derby. Infected pigs can be asymptomatic and become carriers of S. choleraesius. Typically, the bacteria survive in the mesenteric lymph nodes that drain into the intestines, and are not shed in the feces unless the pig is under stress. The carrier state lasts for weeks to months and is self-limiting. Severe infection with S. choleraesius can be serious starting out as septicemia and progressing to pneumonia and enteritis. The infection can spread to various tissues including to the central nervous system leading to meningitis and to the joints where it manifests as arthritis. Yersinia enterocolitica is a species of gram-negative coccobacillus-shaped bacterium, belonging to the family Enterobacteriaceae. Primarily a zoonotic disease (cattle, deer, pigs, and birds), animals which recover frequently become asymptomatic carriers of the disease.
Yersinia enterocolitica is a heterogeneous group of strains, classified into 6 biogroups, and into more than 57 O serogroups. The human pathogenic strains most frequently isolated worldwide belong to serogroups O:3, O:5,27, O:8 and O:9. The major route of Y. enterocolitica infection is through contaminated foods or causing gastrointestinal infections which are usually self-limiting. PMID: 22019131

Some strains of EC have evolved virulence factors that precipitate serious disease including enteric diarrhea, urinary tract infections, sepsis and meningitis. The intestinal pathogens of EC include six pathotypes defined by the virulence factors they express. These include: enteropathogenic E. coli (EPEC), enterohaemorrhagic E. coli(EHEC), enterotoxigenic E. coli (ETEC), enteroaggregative E. coli (EAEC), enteroinvasive E. coli (EIEC) and diffusely adherent E. coli (DAEC). Uropathogenic EC (UPEC) is the most common EC infection that occurs outside the GI tract. The EC pathotypes that infects extraintestinal locations have been designated ExPEC. Enterotoxigenic Escherichia coli (ETEC) produces a heat-labile (LT) and a heat-stable (ST) enterotoxin, both of which cause severe diarrhea in both humans and animals. A subsequent secretion of chloride ions, stimulation of arachidonic acid release, and production of prostaglandin E2 and 5-dyroxytryptamine leads to an efflux of water, bicarbonate ions, sodium ions, and chloride ions into the intestinal space, all of which leads to watery diarrhea. Escherichia coli O157 is an enterohemorrhagic strain of the bacterium Escherichia coli and an emerging cause of foodborne illness. An estimated 73,000 cases of infection and 61 deaths occur each year in the United States alone, although it is rarer in less industrialized countries. Infection often leads to bloody diarrhea, and occasionally to kidney failure. Most illness has been associated with eating undercooked, contaminated ground beef, although it is also transmitted by person-to-person contact, produce, drinking unpasteurized milk or swimming in or drinking contaminated water. The 2006 United States E. coli outbreak was linked to a large quantity of spinach contaminated with this strain.

The invasion plasmid antigen H (ipaH) gene is a multicopy gene exclusively found in all Shigella and enteroinvasive E. coli (EIEC). Shigella and EIEC both evolved from nonpathogenic Escherichia coli, and sequencing of multiple housekeeping genes indicates that EIEC is genetically related to Shigella. Shigella causes bacillary dysentery with symptoms including abdominal cramps, nausea, fever and a bloody and mucus diarrhea. Cyclospora cayetanensis is a protozoan that causes disease in humans, and perhaps other primates. It has been linked in the United States from fecally-contaminated imported raspberries and was virtually unknown before about 1990, but has been on the rise since. The health risk associated with the disease is usually confined to adult foreigners visiting endemic regions and acquiring the infection: this is why C. cayetanensis has been labeled as causing "traveler's diarrhea."

Entamoeba histolytica is an anaerobic parasitic eukaryote protozoan, part of the genus Entamoeba. It infects predominantly humans and other primates. Diverse mammals such as dogs and cats can become infected but usually do not shed cysts (the environmental survival form of the organism) with their feces, thus do not contribute significantly to transmission. The active (trophozoite) stage exists only in the host and in fresh feces; cysts survive outside the host in water and soils and on foods, especially under moist conditions on the latter. When swallowed they cause infections by excysting (to the trophozoite stage) in the digestive tract.

Norovirus (NV) is a non-enveloped, single-stranded RNA virus that belongs to the Caliciviridae family. It was previously known as the 'Norwalk-like virus'. Of the six known genogroups of NV, only three are known to infect humans and include GI, GII, and GIV. Within these three genogroups 25 genotypes have been discovered, which is why people can be infected multiple times throughout their lives. Infection with NV causes inflammation of the stomach and intestines which leads to non-bloody diarrhea, vomiting, nausea, stomach pain, fever, headache, and body aches. Symptoms persist for 1-3 days, but NV can be found in stool samples of infected people for up to two weeks after symptoms subside. The virus is highly contagious and is transmitted by the fecal-oral route, by contact with infected people, and by contact with contaminated surfaces or substances. NV is the primary cause of food-related illness in the United States. The most common genotype of NV that is responsible for outbreaks since 2002 is GII.4. NV spreads quickly in closed spaces such as daycare centers, nursing homes, schools, and cruise ships. Rotaviruses are non-enveloped, multilayered, icosahedral viruses composed of an outer layer, an inner layer, and a core. After the immature, double-layered virus is assembled in the host cell cytoplasm, they bud across the endoplasmic reticulum (ER) and acquire a temporary membrane that has on its surface the ER resident viral glycoproteins NSP4, VP4 and VP7. The virus loses its temporary membrane and the NSP4 glycoprotein as it moves toward the center of the ER cisternae. The VP4 and VP7 proteins are pushed to the outermost membrane layer and become the mature triple-layered rotavirus. The outer capsid glycoprotein VP7 is believed to be important for the attachment to and entry in the host cell. After it enters the host cell, the VP7 glycoprotein is lost. [UniProt: Q89865] When the host cell lyses, the mature virus are released. There are eight groups of rotavirus, A through H. Groups A, B, C, and H are associated with an acute gastroenteritis and are found in humans and animals. Groups D, E, F, and G are found only in animals. Rotavirus A (RVA) are the cause an acute gastroenteritis in children and animals. RVA is the most common infectious organism to cause severe gastroenteritis in children less than 3 years of age. It is estimated that 95% of children worldwide between the ages of 3 and 5 will become infected with RVA. Approximately 8000 children under 5 years of age in Latin America and the Caribbean die of acute enteritis caused by RVA.
